The
wine cellar of Cascina Perfumo is at the south east of the farm, together with
the house and some stores for the machineries. Here we keep the grapes after the
harvest and it's from here that the wine production begins. The wine cellar
is divided into various rooms and each one has its own function: -
wine-making and stockage room, where the grapes are pressed and the must obtained
is put in controlled temperature tanks to obtein the fermentation and the decantings;
than the wine is stored and conserved for a time that varies according to the
type of product and the maturation that you want to reach, until the sale, the
bottling and, if necessary, the passage to the ageing room. - ageing
room, where the wine is put in oak tanks (225 litres barrels, tonneaux until
500 litres, or bigger barrels) to assure a right maturation; here the temperature
and the damp are constant during the year and in that period the wine has a great
evolution, that is the consequence of a slow and continuous exchange of oxygen
through the porous walls of the tanks. - distribution room, where
the wine is put in little or medium tanks (4000 litres maximum) ready to be bottled
or to be distributed loose; - bottling and packaging room, where
the wine is bottled with the adequate machineries (filling machine, corking machine,
labelling machine, etc.) connected through the conveyors; often the bottled wines
are not packed immediately, in fact we often practice another stockage in the
bottle; - bottles store, where we practice the stockage, whose
duration depends on the product; here the wine is kept in the stacked bottles,
to assure the maximum evolution for the future sale; - packages store,
where the labelled and packed bottles are kept in a fresh and dry room, for distribution
and sale; - analysis laboratory, to control and verify all the
products in every part of the production.
